Chocolate Chip Banana Muffins

Bananas are a pretty big staple in our house.  It is rare that I leave the grocery store without a bundle of them and I'm usually at the store at least 3 times a week.  Between protein shakes and the kids eating/wasting them, we go through a lot.  Every once and a while though, we will not get around to eating all of them fast enough and they will turn brown.  Loyal loves to put the brown ones in his protein shake but in a desperate attempt to speed up our morning routine, I made a batch of muffins with them.  I am not usually one for banana flavored treats but for some reason, on this particular morning, I was craving chocolate chip banana muffins.

I came across this recipe on Pinterest and wow, they were so good! They were gooey and chocolatey and so unbelievably moist, just as she said they would be.   Loyal took one bite and said it was the best muffin he had ever had!  This was the first time I had ever made muffins that didn't come from a box so I was eager to try this recipe again, changing things up just a little bit.  I didn't have baking soda this time around and I wanted to use a little less banana because the gooey-ness of the first batch may not be for everyone.  This round, the muffins were still moist but had more of a muffin consistency which the first recipe didn't have as much.  By decreasing the amount of chocolate chips, they were the perfect combination of banana and chocolate. After everyone in the family tried both versions, it really came down to personal preference.  Ultimately we agreed that my modified version won only because it resembled more of a traditional muffin texture.  It was close and both were so good!

3 ripe bananas
1/3 Cup melted butter
2/3 cup sugar
1 egg
1 teaspoon vanilla
1/2 tablespoon baking powder
A pinch of salt
1 1/2 cup all purpose flour
1/2 cup chocolate chips


Preheat oven to 350.  Grease muffin tin.
Melt butter and let it cool while doing the next steps.  Peel your bananas and add them to a large bowl.  Mash them with a fork until texture is mostly smooth and creamy.  Add melted butter, sugar, egg, and vanilla.  Mix until combined.  Stir in salt and baking powder.  Add flour and chocolate chips, mixing together until just combined.

Divide mixture into baking tins and bake for 18 - 20 minutes.  I only made 9 muffins with this modified recipe and they came out perfect!  For a slightly smaller size muffin, fill all 12.
