Slow Cooker Pork Tacos

This is one of our all time favorite meals in our house.  We love Mexican food, especially tacos, and Loyal loves pork so this has become a staple.
And it's so easy!!! 
I always like to make a "bed" to place my meat on in my crock pot.  I usually put carrots, celery and diced onions.  This time I used both red and white onions (and a lot of them) and it came out great.  I seasoned and browned the meat on the stove before I put it in.  Cook on low for about 6 hours.  Remove everything but the pork.  You can either discard or eat, it's up to you.  I threw everything out except for the carrots and I fed those to Lo.  Gently shred the pork (not too much) with 2 forks. It should fall apart very easily.  Put back in the crock pot and cook another hour or 2 on low.  At this point, you can add BBQ if you want BBQ pork.  And that's it!

I served my tacos with homemade pico de gallo and sliced avocado. 
We also had another one of our favorites, black bean & corn salad.  It is delish!  (Recipe coming soon...)
