Black Bean & Corn Salsa

I have been making this salsa a lot lately and it is so good!  Both red pepper and black beans are 2 super foods that are so healthy and so good for you.  I don't make them enough in our house and this is a really good dish that incorporates both.  Another plus, it's so easy to make!
Drain and rinse 1 can of black beans.  Dice red pepper and onion.  I steam 2 corn on the cob and then cut the corn off of the cob.  You can always use canned corn if you want, or if you are in a time crunch.  Mexicorn would be good in this!  Add chopped cilantro, salt & pepper, squeeze a few limes and stir.  And that's it!  See, so easy.

This dish is so versatile too.  You can add or leave out anything really.  Diced jalapenos would be good.  Also, you can easily adjust how much of each ingredient you want based on your taste.  Just a side note: I use about 3/4 can of black beans, 1/2 an onion and 1 or 2 red peppers.  Maybe 2 or 3 limes in mine.

We eat this with chips, on tacos, as a side dish...so much you can do with it.  One of my favorite things to use the leftovers for is a salad topping.  I make a salad, throw this on top with some shredded fiesta cheese mix and it is so good!!!
