Pancakes!

While we were snowed in last week, we let the little babe try pancakes for the first time!!!  Omg, it was incredible.  He loved them and I think we may have loved watching just as much.  So far he is really enjoying his finger foods.  He eats more and more each day.  I have cut out puree and cereal in the mornings and will probably continue with them for a little while in the evenings just to make sure he is full enough for the night.
I mean, this face!  He might just get to have pancakes every morning!
I didn't get a chance to post this last week and it's just too pretty not to.  Loyal got up super early and took this picture.  Isn't it beautiful?  After all of the complaining about being snowed in and cooped up for a week, moments like this are so easily taken for granted.

Cookies & Cream Cake Balls

I made cake balls for Valentine's Day this past week which I posted about here.  Chocolate is my husbands favorite thing ever and Oreos might be a close second.  
This combo is super easy.  It really just follows the basic guidelines of making regular cake balls and adding crushed Oreos.

Ingredients:
1 box white cake mix
1 can of white vanilla icing
1 package of Oreos
1 package of chocolate candy coating

Directions:
Make the cake according to the directions on the box.  Crush your Oreos and add to the batter.  {I didn't use the entire package but I guess this would be a personal preference.}  Bake the cake.  Let it cool once it's done baking.  Once the cake has cooled completely, scrape off the top crunchy layer that has darkened.  This way the cake crumbles stay nice and white.  Crumble up the cake.  Add a couple spoonfuls of icing to the crumbles and mix.  If you like your cake balls more moist then add more icing.  If you like them more on the dry side then add a little at a time until you reach the consistency that you desire.  Roll them up into balls.  Stick them in the freezer for 5 minutes or so.  Just enough to firm them a little but you don't want them to crack.  Melt the candy coating and coat the cake balls.  Place to the side to dry.  It's best to add sprinkles when they are about half way dry.  If you add them right away, they will slide off.  Enjoy!

Garden Veggie Pizza

I am a little backed up with pizza posts but hopefully I will get caught up this week.  Two weeks ago we were kinda in the mood for a more normal pizza.  I wanted a bunch of veggies so with went with a pretty classic garden veggie pizza.  This was actually the first one that we did with pizza sauce and boy, it sure hit the spot!
Pizza sauce, grilled chicken, pepperoni, sauteed mushroom, onion, green pepper, black olive and fresh sliced tomato.

Valentine's Day Treats

Snow days call for baking.
We are on our second day of being cooped up so it was only a matter of time before some baking took place.  The snow actually seemed to work out perfectly because we weren't planning on doing anything for Valentine's Day this year since we are going out of town.  The only backfire is that we were supposed to be on diets until we went out of town.  Whoopsie.

9 Months

Happy 9 months to my little babe today!  Gosh, time sure is flying by.  We went to the doctor yesterday for a check up.  He weighs 17 lbs 10 oz (25%) and 28in in length (92%).  Apparently the growth spurt he just had was all in length!  This little guy is long and lean, that's for sure.  The doctor gave us free rein with food so he can now eat anything that we eat.  Eggs, pancakes, cheese, pasta, soup, quesadillas...
Up until yesterday he had pretty much only had fruits and vegetables.  I went to the store after we left, which was nothing short of a nightmare thanks to a call for snow.  It's crazy when you walk in (holding a baby) and there is not one available cart. So we had to wait for someone to come out that had enough bags that they could carry and give me their cart.  Geez.  Anyway, we got a bunch of good stuff!  Pasta, waffles, mac n cheese, yogurt and a couple other things.  I plan on keeping things very well balanced so if I give him pancakes for breakfast it will definitely have more fruit than pancake.  I will give him what we eat for dinner so hopefully that will keep us on track eating healthy as well.

Sleep:  the past 3 nights he has slept through the ENTIRE NIGHT.  7:30pm-7:30am!!!  I was just starting to think this day would never come!  I'll tell you, the sleep thing has been a pretty consistent nightmare since about 4 months so this new change was definitely welcomed.

Teeth: still 2 on the bottom and one on top.  The second top front should be through any day now.

Valentine-osaur

This little guy will be 9 months next week and he is growing so fast!  We are starting to transition into 12 month sized clothes which just blows my mind because his first birthday is literally right around the corner now.  Well, with the next size up comes new pj's!  These 2-piece pj's are seriously the cutest thing I've ever seen.  I don't know why but my husband and I have been waiting to put him in these.  I feel like he turned into a little boy the second we put him in them.  He is just so darn cute and with Valentine's Day coming up, I figured these little dinosaurs in heart boxers were too cute to pass up.
Anyone else love baby butts in the air?!

In other news, one of his top teeth cut through the other day and I see the second one on the verge.  Needless to say, it's been a rough couple of nights with him waking up so much through the night.  I can't complain about the 2+ hour naps during the day though!

BBQ Pork Pizza

I meant to sit down and do this yesterday but just couldn't find the time, which is pretty much always the case these days.  Anyway, last Friday's pizza was a big hit for my husband.  He absolutely loved it.  But then again, he loves anything with pork and coleslaw.  This one wasn't necessarily my favorite mainly because I don't share the same love for pork as the hubs.
BBQ sauce (I used Sweet Baby Ray's Honey BBQ), shredded pork (recipe here), onions (from the crockpot pork), pepper jack cheese, top with pineapple cole slaw.  I diced fresh pineapple the day before and added it to a bag of Asian cole slaw mix.
