red pepper cajun chicken: "slow cooker sunday's"

slow cooker sunday's:
red pepper cajun chicken
2 hours cook time
Red Pepper Cajun Chicken
ingredients:
boneless skinless chicken breasts
1 can chicken broth
1/2 cup fat free half & half
2 tablespoons butter
1 tablespoon minced garlic
salt & pepper
cayenne pepper
tony's
4 large red bell peppers
1 small onion
1 package mushrooms
1/4 cup mozzarella cheese
grated parmesan
chopped parsley
whole wheat pasta
directions:
combine chicken broth, half & half, garlic, butter and seasoning in slow cooker on low setting.
Butter
chop red peppers while slow cooker is heating up.  add along with mushrooms and mozzarella.  stir.
Mushrooms
i used 3 extra large chicken breasts that i cut in half.  place chicken on top of veggies and season.
 
cook on low for 2 - 2 1/2 hours or until chicken is cooked throughout.  stir after about an hour.
remove and serve when ready.
Chicken
garnish with parmesan cheese and parsley.

this meal is super easy and cooks quickly which is great if you happen to be in a pinch for time.  it didn't come out as creamy as i had expected but that was fine with me.  for leftovers the next night i used brown rice instead of pasta, both were yummy.
